Tangerine Peach Balsamic Chicken

  1. 4 boneless chicken halves
  2. 1/2 tsp salt
  3. 1/4 tsp pepper
  4. 1 tbsp olive oil
  5. 1 white onion thinly sliced
  6. 1 celery rib thinly sliced
  7. 1/2 cup chicken broth
  8. 3 tbsp orange juice
  9. 1/2 cup of tangerine peach balsamic
  10. 1/4 tsp thyme
  11. 2 tbsp butter
  12. 1 tbsp minced fresh parsley
  13. 1/3 cup grated parmesan
  1. 1). Flatten chicken to 1/4 inch and sprinkle with salt and pepper. Cook in oil over medium heat for 2-3 minutes on each side. Remove and place in 9x13 baking dish.
  2. 2). Saute onion and celery in same oil until crisp-tender. Add the chicken broth, orange juice and thyme. Bring to a boil. Stir in Tangerine Peach Balsamic. Remove from heat add butter and parsley. Pour over chicken and sprinkle parmesan on top. Bake at 350 for 30 minutes. Enjoy!!!!!!!!!
