Electric Lemon Shrimp over Pasta

  1. 1 stick butter
  2. 1 to 2 cloves chopped garlic
  3. 1 to 2 lemons sliced thin
  4. 1 lb. shrimp (your choice, frozen or fresh)
  5. Italian seasoning
  6. parsley, optional
  7. Asparagus, optional
  8. Capers, optional
  9. Artichoke Hearts, optional
  10. Pasta, your choice
  11. ½ to ¾ C Electric Lemon Vinaigrette
  1. Preheat oven to 350. On cookie sheet with a lip, melt 1 stick of butter in oven. Meanwhile, heat a large pot of water for pasta of your choice, I use linguini. Layer thinly sliced lemons on top of butter after it is melted. Next layer is shrimp placed on top of lemon slices, sprinkle with Italian seasoning, add asparagus to cook, if you choose to. Cook until shrimp is done. Usually about 12-15 minutes, until the shrimp are no longer pink. By this time your pasta should be cooked. Strain the pasta, put in large bowl, add about ½ to ¾ Cup Electric Lemon Vinaigrette to taste. Put lemons and shrimp on top sprinkle with capers if you desire or any of the above optional choices. I use what I have in the house. Great with a salad, and of course use the California Balsamic dressing of your choice, a loaf of bread, an easy recipe that looks elegant! Yummo!
