  1. 3 Fennel Bulbs
  2. 2 Spirgs of Fresh Thyme
  3. 1 Bay Leaf
  4. 1 1/2 cups Apple Juice
  5. 3 Tablespoons Fig Balsamic
  6. 1 Tablespoon Salt
  7. 1 Tablespoon Pepper
  1. Half or quarter fennel bulbs (discarding stem and fronds) and add to bowl. Whisk Apple Juice, Fig Balsamic, Thyme, Bay leaf with Salt and Pepper. Pour into a sauce pan - saute on medium until balsamic caramelizes to fennel bulbs. Serve over rice or a bowl of greens.
