Lemon Black Bean Quinoa Salad

  1. 1 cup Quinoa
  2. 1 cup White Corn
  3. 2 Scallions, chopped
  4. 1/2 cup Celery, chopped
  5. 1/2 cup Green Peppers, chopped
  6. 1 can of Black Beans, drained and rinsed
  7. 1 cup Grape Tomatoes, chopped
  8. 1 Cucumber, chopped (optional)
  9. 1/2 cup Kalamata Olive (optional)
  10. 1/2 cup Feta (optional)
  11. Dressing
  12. 2 Tablespoon Olive Oil
  13. 2 Tablespoons Electric Lemon Vinaigrette
  14. 1 clove of Garlic
  15. Oregano, Cumin or Curry to taste
  16. Salt n Pepper to taste
  1. Soak Quinoa for five minutes then drain. Cook either in vegetable stock or water for 15 minutes. In the last five minutes put in corn if using frozen. Drain and cool. Mix the remaining ingredients in a bowl, pour the dressing in and mix well. Best if served cold, Great as a leftover.
