Blackberry Balsamic Lentil Salad

Ingredients:
- 1 cup cooked green or brown lentils
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1 cup blackberries
- 1/4 cup fresh parsley, chopped
- 1/3 cup Blackberry Balsamic
- 2 tablespoons Dijon mustard
- 1 tablespoon maple syrup
- Salt and pepper to taste (optional)
Directions:
- In a large bowl, combine cooked lentils, cherry tomatoes, cucumber, red onion, blackberries, and fresh parsley.
- In a separate small bowl, whisk together the Blackberry Balsamic, Dijon mustard, maple syrup, salt, and pepper to create the dressing.
- Pour the dressing over the lentil mixture and toss well to coat evenly.
- Allow the salad to marinate for at least 15 minutes to let the flavors meld together.
