Ingredients:
- 1 Onion, chopped
- 1/3 cup peppers
- 1/2 cup carrots, julienned
- 1/2 cup bell peppers, chopped
- 1 Green Onion, chopped
- 1/2 cup Kale, chopped
- 2 tbsp. pumpkin seeds, raw
- 1 can pinto beans, 15oz drained
- 1 tsp cumin
- 1 tbsp. Fig Balsamic
Directions:
- in 1/2 cup water saute onion, peppers, carrots , kale, and pumpkin seeds.
- add pinto beans, cumin, and fig. Simmer for a few minutes and serve. Optional: Garnish with dried fig sliced in half and a sprig of parsley.
