Bubba’s Vegan Fajitas

Recipe By: Lori Gibson “The Clean Veganista”

Ingredients:

  • 2 cans young/green jackfruit packed in water, drained, rinsed, squeezed to remove excess liquid
  • 1 large onion, peeled and sliced
  • 1 each: red, yellow, orange & green bell pepper or whatever you happen to have on hand, sliced

Marinade Ingredients:

  • 1/2 tsp garlic powder OR fresh garlic, minced
  • 2 tsp cumin
  • 1 handful fresh cilantro OR culantro, minced
  • 2 tbsp. Teriyaki Balsamic
  • 1 tbsp. Smoked hickory Balsamic
  • 1/4 cup coconut aminos
  • Juice of 1 large lime
  • 2 tbsp. nutritional yeast
  • 1/8 tsp poultry seasoning
  • Few turns freshly ground whiskey barrel smoked black pepper

Sides, toppings and serving suggestions:

  • Flour tortillas
  • Avocado or guacamole
  • Refried beans
  • Mexican rice
  • Sliced jalapeños
  • Cashew sour cream

Directions:

  1. Using your hands, shred/break apart jackfruit pieces so that it resembles pulled chicken.
  2. Combine marinade ingredients, add shredded jackfruit and toss to distribute; marinate in the fridge for 30 minutes or up to 48 hours.
  3. Heat skillet over medium heat, add onion & peppers, cover and cook for about 8 minutes, lifting the lid and stirring 2 minutes, until tender-crisp. Add water 1 tbsp. at a time as needed to deglaze the pan.
  4. Add jackfruit to the skillet, cover and cook for 2-4 minutes or until the jackfruit is heated through.
  5. Serve with your fave toppings.

Air-Fried Kickin’ Shrooms!

Ingredients:

Directions:

  1. Preheat air fryer to 400 degrees
  2. In a large bowl, toss all ingredients. Place the mix in the air fryer at 400 degrees for 10 minutes.
  3. Remove from air fryer and stir well, then air fry for another 5 minutes.
  4. Remove and enjoy! Great as a side, or served over a baked potato or rice.

Very Cherry Vegan Brownies

Ingredients:

  • 4 large bananas, over-ripe
  • 5 tbsp. unsweetened cocoa powder
  • 1/4 cup dried cherries, chopped
  • 1 tbsp. Very Cherry balsamic

Directions:

  1. Preheat oven to 350 degrees, line an 8x4inch loaf pan with parchment paper. Do not go any larger, as they will be too thin and burn.
  2. Using a hand mixer or food processor, mash bananas until they become a puree consistency with no chunks left. Whisk in remaining ingredients to form a smooth batter. Pour this batter into the loaf pan and spread evenly, tapping a few times to remove air bubbles.
  3. Bake at 350 degrees for 20-25 minutes. The brownies are done with the top looked dry and dark and the center is not jiggly but still wet on a toothpick. Let brownies rest in the fridge for 1-2 hours, that center will thicken enough to cut with a knife.
  4. Serve and enjoy! The outside of the brownies will be dark, this is normal. Store uneaten brownies in the fridge. The brownies should be sweet, but not too sweet. you can taste the batter before baking and adjust sweetness to taste.

Very Cherry Black Forest Pudding

Ingredients:

  • 1 cup raw sunflower seeds or cashews, soaked to soften
  • 1 1/2 cups plant based milk of your choice
  • 1 tbsp. Very Cherry Balsamic
  • 1/4 tsp cinnamon
  • 1/2 tsp vanilla powder
  • 2 tbsp. date syrup (optional, substitute agave syrup or 2-3 soaked dates)
  • 2 tbsp. cocoa powder
  • frozen cherries, pitted for bottom of glass. (optional: substitute fresh or thawed cherries, the frozen ones add a syrup to the pudding as they thaw)
  • optional: shredded coconut for garnish

Directions:

  1. In a blender or food processor blend oat milk, balsamic, cinnamon, vanilla powder, and cocoa powder until smooth.
  2. place a few frozen cherries in the bottom of fancy glasses. Then pour the pudding into the glasses leaving some room at the top for garnish. Top with more cherries and garnish with a sprinkling of shredded coconut. Serve and Enjoy!

Acorn Squash with Quinoa Stuffing

Ingredients:

  • 2 acorn squash, 1lb each (optional: substitute delicata squash, we did both)
  • 1 cup red quinoa, rinsed
  • 2 cups ready to use sodium-free vegetable broth
  • 1/3 cup dried cherries, chopped
  • 1/4 tbsp. black pepper, freshly cracked and divided
  • 1 tbsp. Very Cherry Balsamic
  • 2 tsp. agave nectar
  • 1 cup arugula, roughly chopped
  • 1 cup spinach, roughly chopped
  • 1/3 cup hazelnuts or almonds, chopped

Directions:

  1. Preheat oven to 350 degrees. Cut squash in half and de-seed, place cut side down on baking sheet. bake for 40-45 minutes, or until tender.
  2. While the squash is baking combine quinoa and broth in a regular saucepan and bring to a boil over medium-high heat. Reduce heat to low, cover and simmer for 10 minutes. Stir in cherries, cover and simmer another 2-5 minutes or until liquid is absorbed. Let stand, covered, for 5 minutes then fluff with a fork.
  3. In a large bowl, whisk together the cooked quinoa with the remaining ingredients until combined.
  4. When squash is baked, flip and fill squash with quinoa mixture. Then serve and enjoy!

Bubble & Squeak (Vegan WFPB SOS Free)

A traditional English folk recipe adapted to be SOS free by Joan H Riley.

Ingredients:

  • 2 cups potatoes mashed (Yukon golds or russets)
  • 1 onion, medium, chopped
  • 2 cups cabbage, chopped or shredded
  • 1/2 cup Premium White Balsamic

Directions:

  1. Add 2 or 3 tablespoons of White Balsamic Vinegar to a large frying pan over medium heat.
  2. Add the chopped onion and fry gently until soft and translucent. Add more White Balsamic as needed to keep onions from burning.
  3. Put the cabbage in the skillet and cover. Let it cook and wilt for a few minutes, stirring a couple of times.
  4. Fold in the mashed potatoes into the onion-cabbage mixture with a generous addition of vinegar.
  5. When the mashed potatoes are heated through, press the mixture into the pan for a minute or so. You are aiming to brown (but not burn) the bottom.
  6. Flip over to incorporate the brown bits into the mix and brown the bottom again. Repeat as desired.
  7. Serve with a finishing dressing of White Balsamic vinegar.

Notes:

  • A cup or so of additional chopped vegetables may be added before step 4. (Peas, kale, carrots, garlic and/or Brussel sprouts.) This is a great place to use leftover cooked veggies.

Sushi Rice

Ingredients:

Directions:

  1. Cook your rice as you like, using the rice vinegar and balsamic in place of their volume of water in the pot.
  2. While rice is cooking, prepare strips of your favorite vegetables. We used cucumber, carrots, zucchini, avocado, and cooked sweet potato.
  3. Using a sushi Press, add enough rice on the bottom to fill it 1/4 of the way and press it flat.. Lay veggies on top, top with more rice, and press again.

Notes:

  • you can also use the sushi rice and vegetables in a nori wrap instead of as sushi, or as a sushi bowl filled halfway with rice then topped with vegetables and sprinkled with Premium White Balsamic.

Twice Baked Potatoes

Ingredients:

Directions:

  1. Bake potatoes as you prefer, until soft.
  2. While still warm, cut in half and scoop out the potatoes (try not to disturb the potato skins). Place skins on air fry rack or oven sheet.
  3. Place scooped potato into a mixer or food processer, add Premium White Balsamic and enough milk to make the mixture soft and creamy.
  4. pipe or spoon the mixture back into the potato skins. Top with a dash of Persian Lime Pepper.
  5. Air fry or oven bake at 400 degrees for 15-20 mins, until slightly crispy and firmer. Serve and Enjoy!

Chocolate Walnut Bites

Ingredients:

  1. 2 1/2 cup rolled oats
  2. 8 dates, pitted
  3. 1/2 cup plant based milk
  4. 1 banana, very ripe
  5. 1 tbsp. vanilla
  6. 1 tbsp. Chocolate Orange Balsamic
  7. 2 tsp. baking powder
  8. 3 tbsp. cacao powder
  9. 1/2 cup walnuts, chopped

Directions:

  1. Pre heat oven to 350 degrees. Soak dates in plant based milk, and set aside.
  2. In a food processor:
    • Pulse 1 cup rolled oats into a course-like flour texture.
    • Add ingredients 2-8, pulse until thoroughly mixed.
  3. pour mixture into a bowl, stir in walnuts and 1 1/2 cups whole rolled oats until evenly mixed.
  4. Drop into mini cupcake or brownie bite size pans (silicone is best-no oil needed). Top each mini muffin with half a walnut.
  5. Bake at 350 degrees for 20 min, check for doneness with a toothpick coming out clean. If you make muffin size, they will need to bake longer.
  6. Let them sit a few minutes until cool, they come out of the silicone better.
  7. Enjoy this delicious, healthy, vegan, sos free, tasty treat!!! Optional: drizzle with Chocolate Orange Balsamic while serving.

Healthy Oatmeal Cacao Chip Cookies

Ingredients:

  1. 3 cups rolled oats
  2. 10 dates, pitted
  3. 3/4 cup plant based milk
  4. 1 banana, very ripe
  5. 1 tbsp. vanilla
  6. 2 tbsp. Chocolate Orange Balsamic
  7. 2 tsp. baking powder
  8. 2 tbsp. cacao powder
  9. 1 tbsp. ground flax seeds
  10. 1 tbsp. peanut butter powder
  11. 1/3 cup cacao nibs

Directions:

  1. Pre heat oven to 375 degrees. Soak 10 pitted dates in 3/4 cup plant based milk , and set aside.
  2. In a food processor:
    1. Pulse 2 cups of rolled oats until a course flour texture.
    2. add ingredients 2-10 to the food processor and pulse until well mixed.
  3. Transfer mixture to bowl, stir in 1 cup whole rolled oats and cacao nibs.
  4. Using a small 1 1/2 inch ice cream scoop, drop onto silicone lined or parchment paper lined cookie sheet.
  5. Bake in a pre heated 375 degree oven for 12-15 min. Check with a toothpick.
  6. Serve and enjoy! optional: drizzle with Chocolate Orange Balsamic while serving.
