Couscous with a kick!
- 1 box plain couscous or 7oz dry
- 2 cups broccoli
- 2 cups carrots
- 1 cup green onions
- 1 can - 16oz black olives chopped
- 2 cups tomatos
- 2 large cucumbers
- Feta or Mexican Style Cheese shredded or chunks
- 1 can - 16oz white beans
- Olive Oil
- Sweet Heat or Jake's Mistake or Blazin Habanero
- Salt & Pepper
- Smoked Paprika optional
Prepare couscous as instructed on entire box. Let cool completely and fluff. Cut up vegetables and cheese into bite sized pieces. You can use as many or as little as you want! Mix couscous, vegetables, cheese, olives and beans together. Add olive oil, balsamic vinegar to taste! Mix well. Blend in dill, salt, pepper and paprika to taste. If you set overnight, omit cheese until ready to serve!
