Apricot Balsamic Glazed Tempeh

Ingredients:
- 1 block (8 oz) tempeh, sliced into thin strips
- 1/4 cup Apricot Balsamic
- 2 tablespoons tamari or soy sauce
- 2 tablespoons maple syrup
- 1 teaspoon minced garlic
- 1/2 teaspoon ground ginger
- Salt and pepper to taste
- Optional: sesame seeds and sliced green onions for garnish
Directions:
- In a shallow dish, whisk together the Apricot Balsamic, tamari or soy sauce, maple syrup, minced garlic, ground ginger, salt, and pepper to create the marinade.
- Place the tempeh strips in the marinade, ensuring they are evenly coated. Let them marinate for at least 30 minutes, or longer if time allows, flipping halfway through.
- Preheat a non-stick skillet or grill pan over medium heat.
- Once the skillet is hot, add the marinated tempeh strips, reserving the marinade.
- Cook the tempeh for about 3-4 minutes on each side, or until golden brown and slightly caramelized.
- While the tempeh is cooking, pour the reserved marinade into a small saucepan. Bring it to a simmer over medium heat and cook for 3-5 minutes, or until it thickens slightly into a glaze.
- Once the tempeh is cooked and the glaze is ready, remove the tempeh from the skillet and arrange it on a serving plate.
- Drizzle the Apricot Balsamic glaze over the tempeh strips.
- Garnish with sesame seeds and sliced green onions, if desired.
- Serve the Apricot Balsamic Glazed Tempeh as a flavorful main dish or added to salads or grain bowls.
