Blackberry Balsamic Lentil Salad

  • 1 cup cooked green or brown lentils
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1 cup blackberries
  • 1/4 cup fresh parsley, chopped
  • 1/3 cup Blackberry Balsamic
  • 2 tablespoons Dijon mustard
  • 1 tablespoon maple syrup
  • Salt and pepper to taste (optional)


  1. In a large bowl, combine cooked lentils, cherry tomatoes, cucumber, red onion, blackberries, and fresh parsley.
  2. In a separate small bowl, whisk together the Blackberry Balsamic, Dijon mustard, maple syrup, salt, and pepper to create the dressing.
  3. Pour the dressing over the lentil mixture and toss well to coat evenly.
  4. Allow the salad to marinate for at least 15 minutes to let the flavors meld together.


  • Best served chilled
