Ingredients:
- 1 cup quinoa cooked
- 1 cup blackberries
- 1-2 cups spinach chopped
- 1/2 cup pine nuts
- 2 bell peppers cut in half
- Blackberry Balsamic
Directions:
- Cook quinoa and mix it with blackberries, chopped spinach, and pine nuts.
- Cut bell peppers in half, stuff them with the quinoa mixture, and bake until peppers are tender.
- Drizzle Blackberry Balsamic over the top before serving
Notes:
- All ingredients are approximate because I really did not measure them so If you have extra quinoa mixture, just stuff more peppers
