Blackberry balsamic quinoa-stuffed bell peppers

Ingredients:

  • 1 cup quinoa cooked
  • 1 cup blackberries 
  • 1-2 cups spinach chopped
  • 1/2 cup pine nuts
  • 2 bell peppers cut in half
  • Blackberry Balsamic

Directions

  1. Cook quinoa and mix it with blackberries, chopped spinach, and pine nuts. 
  2. Cut bell peppers in half, stuff them with the quinoa mixture, and bake until peppers are tender. 
  3. Drizzle Blackberry Balsamic over the top before serving

Notes:

  • All ingredients are approximate because I really did not measure them so If you have extra quinoa mixture, just stuff more peppers
