Cilantro Quinoa Salad

  • 2 cups cooked quinoa
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • I cucumber, diced
  • 1/2 cup corn
  • 1/4 cup chopped cilantro
  • 1/4 cup Cilantro Herb Balsamic


  1. Mix all ingredients in a large bowl.
  2. Chill 30 minutes before serving. Can be prepared a day ahead of time.
