The Arbequina olives used to make this are a Spanish variety grown in California. They are small, have a large pit that is very difficult to remove and are wonderfully delicious. This variety won the European Olive Oil competition during the early 2000′s and we have been using it as our one non-infused flavored oil variety. It doesn’t have a lot of olive flavor like the California olives do and that’s why I like it. for those who would like to make a balsamic vinaigrette, this olive oil won’t overwhelm or compete with the balsamic.
